Why is this dish called 雞捲 (Chicken Roll) when there's no chicken in it?
Similarly to Wife Cakes containing no wives, or Bolo Baos containing no bolos (pineapples), 五香雞捲 contains no chicken. Historically, this dish was made by wrapping up scraps and leftovers and deep-frying them. The Taiwanese word that makes the same sound as "雞" (chicken) in Mandarin has the meaning as "leftovers."

This classic delicacy is commonly found at banquets, traditional holidays and ceremonies, and at night markets. The five-spice flavored pork blends perfectly with the sweetness of onions and carrots while the water chestnuts provide a slight crunch. The thin tofu skin wrapper provides a crispy exterior to hold the rich filling.
